Fix test failures in CI by updating dependencies installation:
- Install from requirements.txt (includes httpx for async support)
- Update path: mcp/ → skill_seeker_mcp/
- Fix coverage command to use correct package name

Fixes ModuleNotFoundError: No module named 'httpx' in CI
