fix(docs): correct PROGRESS.md status tables and metrics

- Update GitHub Issues Status table: all 8 issues now shown as closed
- Update Sprint Milestones: all 6 milestones marked complete on Nov 5
- Update Issues Closed metric: 8/8 (100%) instead of 5/8 (63%)
- Update Commits metric: 15 (pushed) instead of 9
- Update Next Action section: sprint complete, ready for next planning
- Update last updated timestamp to Nov 5 17:30 UTC

Fixed oversight where day-by-day sections were updated but summary tables were not.
